About Claudia  

Claudia Scott MS, RD, LD, CDE is a registered and licensed Dietitian Nutritionist and a Certified Diabetes Educator. Claudia earned a Master’s of Science degree in Nutrition from Texas Woman’s University and her Bachelor’s of Science degree in Human Nutrition and Foods from the University of Houston. Claudia is a Clinical Associate Professor, the Director of the Dietetic Internship Program at the University of Houston where she has worked over the last 13 years. Additionally, Claudia has worked with the Memorial Hermann system as a Certified Diabetes Educator for over 11 years and developed and piloted the Employee Wellness Diabetes Self Management Program at Texas Children’s Hospital in 2013. Claudia also is bilingual, fluent in both English and Spanish, born from Latin American parents, and is certified as a Spanish language interpreter and translator.

Claudia just completed her role as Chair for the Nutrition and Dietetic Educators and Preceptors (NDEP) organizational unit of the national Academy of Nutrition and Dietetics and currently serves the NDEP liaison on for the Council on Future Practice and as an accreditation site reviewer for the Accreditation Council for Education in Nutrition and Dietetics.

Throughout her career, Claudia has been recognized for her outstanding contributions to nutrition and education through awards she has received including the "Distinguished Faculty Scholar Award" , the “Teaching Excellence Award”, and the “Ross M. Lence Award for Teaching Excellence” all awarded through the University of Houston. She has also been recognized by the Texas Academy of Nutrition and Dietetics through the “Outstanding Dietetic Educator of the Year” award. Claudia is a strong advocate for life long learning, as such, she will begin her Doctorate of Clinical Nutrition this fall.
